The recipe is from a cookbook given to us by Steve's sister - Betty Crocker: Easy Everyday Vegetarian. Here's the recipe with our adaptations:
Ingredients:
6 flour tortillas (8-10 inch)
2/3 cup peanut butter
1/4 cup tamari
2 tbsp apple cider vinegar
2 teaspoons honey
2 cups shredded mozzarella cheese (8 oz)
1 bag (1 lb) frozen stir-fry vegetables, thawed and drained
handful of toasted cashews
(Steve was getting annoyed with me snapping photos while he was trying to eat. oops!)

1. Heat oven to 400 degrees F. On ungreased large cookie sheet, place tortillas. Bake 5 min.
2. Meanwhile, in small bowl, mix peanut butter, tamari, vinegar and honey.
3. Spread peanut butter mixture on warm tortillas. Spread stir-fry veggies evenly on tortillas. Sprinkle with cheese to your liking. (Use your own homegrown veggies instead of these store bought ones if you have some.)
4. Bake 10-15 minutes or until cheese is melted.
5. Sprinkle toasted cashews on top & enjoy!
