Sunday was drizzly and cold here...much like many of our Indiana days. I decided it was a perfect day to make soup!
And a lot of it...
Here's the recipe I used, which I found in Natural Home magazine. I followed the recipe pretty much true except I added zucchini we had on hand and doubled it. It's one of those soups that you just feel healthy eating. Try it out if you want.
I made soup this weekend too! It is definitely fall here in the NW and soup weather has arrived. I made a squash soup with carrots, onions and added kale and collards at the end. It was yummy with homemade cornbread. My brother told me about a good recipe website that is mostely vegetarian. He likes their soup recipes: 101cookbooks.com I thought it might interest you guys. ReplyDeleteGreat soup for a rainy Indiana day. I can use up some of my last of the season thyme (like the lavendar with the cookies). It reminds me of my butternut squash, tomatoes, black beans and green pepper soup.
