Steve's Affordable and Delicious Vegan Burritos sans-Caulk Gun

Sure, I could throw together some burritos in under 4 seconds using a series of caulk-guns like they do at Taco Bell. And wouldn't Jennifer be impressed to find me in the kitchen: gun belt low-slung, a caulk-gun of guacamole in one holster and one of liquefied bean product in the other - and poised for rapid fire burrito creation mayhem?

But that would not be in tune with the Slow Foods Movement, nor would it foster gastronomic peacefulness so, instead, I did this:

From our 25 lb bag of dried pinto beans (that cost about $7 whole dollars), I measured out...

...6 cups of beautiful beans and...

...transferred them into a pot and added water to about 3 inches above the beans.

I like the quick-cook method for dried beans wherein I boil them for 5 minutes then turn off the heat, cover, and let sit for 1 hour. After 1 hour, rinse, add fresh water and bring to boil. They are usually soft within a half hour. Then I...

...mash with a pastry cutter...

...add 2 - 28 ounce cans of green chile sauce (and 1 - 28 ounce can diced green chiles but alas we had none)...

...I also threw in about 6 T of chile spice mix and 1 quart of rice I had cooked earlier.

I then stirred it all up and brought it back up to a slow simmer for about 1/2 hour.

While the filling was simmering, I gathered up some cooking pans and tortillas. (The best place for BIG tortillas in Ft. Wayne, IN is George's International Grocery.)
Added two ladles full of filling per tortilla...

...rolled 'em all up and placed on baking sheets and cooked at 350 degrees F for 30-40 min. ...

...found my more-precious-than-gold-bullion gen-u-ine New Mexico salsa and an avocado from Mexico, mixed them together...

...and we were ready to dine!

This made about 20 HUGE burritos and the total cost was about 10 dollars. Isn't it ironic that REAL food is actually quite economical?
